So we finally made it to one of the hottest, hippest restaurants in town today, Sumo Maya. German Osio, the team and his Executive Chef, Matt Zdeb have created one of THE MOST (yes…all caps means I yelled that) incredible dining experiences the valley has to offer. We were fortunate to try out a number of dishes and still can’t get over the truly artistic creations our tastebuds were treated to. Each dish was better than the last with the last being spectacular. These creations are so special we don’t want to mention them all in one post, rather…you’re going to see a few different posts over the next couple of weeks so we don’t take anything away from each of these remarkable dishes.

The first dish is probably the one my assistant for the day (Cooper) and I enjoyed the most. This popular Vietnamese street food has been created in a way I don’t think has ever been imagined. With the combined Latin American ingredients fused with the Far East techniques, the roasted chile, pasilla broth, rice noodles, cilantro and lime production of Pho is a mind blowing flavor encounter that might simply be described as a poetic culinary creation.

Cooper has already commited he will be going back on a regular basis with his girlfriend for the Mexican Pho. PLEASE (yelling again) add this dish and Sumo Maya to your list of places you’re going to in the very near future!
